South African Bunny Chow Recipe

Bunny chow, often referred to simply as a bunny, is a South African fast food dish consisting of a hollowed-out loaf of white bread filled with curry. It ultimately originated among Indian South Africans of Durban.

Ingredients

  • 500 G Mutton or Lamb
  • 2 Tbsp Oil
  • 2 Medium Potatoes
  • 1 Chopped Onion
  • 1 Tsp Curry Powder
  • 1 Tsp Garlic Paste
  • 1 Tsp Ginger Paste
  • 1 Tsp Salt
  • 1 Can Chopped Tomatoes
  • 1 Tsp Chilli Powder
  • 1 Medium Green Pepper
  • 1/2 Tsp Ground Coriander
  • 1/2 Tsp Sugar
  • 1/2 Tsp Cumin
  • 1/2 Tsp Black Pepper
  • 1 Loaf White Bread
  • Salt to Taste

Instructions

  • Heat the oil in a deep saucepan on medium heat and fry the onion for about five minutes until it becomes soft.
  • Add the masala, coriander, cumin, and chili powder (optional) and fry for 1–2 minutes until the onion looks half-cooked.
  • Add the meat, garlic, and ginger, and stir for about 3 minutes, then, add canned tomatoes, chopped potatoes, salt, and Green pepper.
  • Cover with a lid and simmer over medium to low heat for about 30 minutes, stirring now and again so that the bottom of the pot doesn’t burn.
  • Cook uncovered for a few minutes to allow the sauce to reduce and thicken. After a few minutes take the pot off the stove. It is now cooked and ready to serve. Add Black pepper to taste.
  • Cut the loaf of bread into quarters and then scoop the centers of each quarter loaf, creating a ‘bowl’ of bread for the curry. Fill the hole of each quarter loaf with the curry and sauce.
